Any cheap 1 1/8 sealed baring headset should do as long as it’s a cup external style and not an integrated headset.
FSA make a number of good ones such as the Orbit, Orbit MX etc.

Any cheap alloy 27.2mm seatpost will do unless you’re concerned about weight or are exceptionally heavy then something like a Thompson Elite.
We recommend any 1-1/8th stem with a length between 80-100mm. The clamp size depends on preferred bar set up.

Saddles are again a personal preference, get something cheap if you have no idea. WTB make great gel saddles for mountain bikes which are great for that $40 mark.
